Description
This banana bread is something Grandma Sita makes a few times a week. Not for show, but because it feeds the home. It’s soft, filling, and made from what we grow. The bananas come from our yard. The eggs from the chickens. The rest depends on what’s around, what’s growing, or what must be used up, too many bananas, extra sugar or flour!
In island homes, you learn to stretch ingredients. You make things last, and you still make them taste good. That’s how Sitali was raised, and that’s how she still bakes. No machines, no fuss. Just her hands, a bowl, and maybe a mixing spoon. But really what gets the job done is her years of experience.
